So here is my first baking post of the blog!!
Last night as I was getting my house ready for our babysitter to come today, I realized that I hadn’t made any treats yet for her. I try to always have a little something extra for our babysitters when they come to our house. I want them to WANT to come babysit. If not because they love the boys, well at least maybe they will love the treats!
I decided to tackle Smitten Kitchen’s blondie recipe. She talked on her site http://www.smittenkitchen.com about how quick, easy, and versatile they are to make. She also talked about how they will seem under baked when you pull them out, but to trust the process and they will be perfect. So I gave it a go.
- 1 stick of butter 8TBS
- 1 Cup of brown sugar
- 1 egg
- 1 tsp vanilla
- 1 tsp salt (I used kosher- my favorite for baking)
- 1 cup flour
- 1 1/2 cups of any add-ins you want (I went for chocolate chunks)
Preheat the oven to 350 degrees. Prepare an 8×8 pan with a parchment paper sling and grease the sides where the parchment does not go up the pan. She recommended browning the butter on the stove after melting it, which I did. Then mix in the brown sugar. Once it is lukewarm mix in the eggs, vanilla and the salt. Then mix in the flour and finally the chocolate chunks.
The dough was think just like she said it would be and needed to be manipulated into the corners of the pan. I added a sprinkle of pearl sugar and kosher salt over the top before they went into the oven to jazz them up a little bit. I baked mine for 23 minutes or when I could first start to smell them in my oven. I was skeptical that they were cooked all the way through, especially since my oven tends to run a little cold. I took them out anyway and let them cool for 10 minutes before trying a small corner. It was gooey for sure! But it was also delicious!! I let them cool before slicing them and before I knew it a whole side of the pan had disappeared between my husband and I sneaking little tastes. Now, less than 24 hours later – there are only like 5 pieces left of the whole batch! They were a hit for sure!
As my babysitter was leaving today, I asked her what she thought of them…she said she loved them! WIN!
